This, has few ingredients
So, is very quick to make
As people often say
It's just a piece of cake
Gently sauté lots of leeks
In Suma margarine
With an added Spanish onion
To keep the flavour keen

5 litre (9/10 pint) pan
melted sunflower spread to cover base
large spanish onion, thinly sliced
8/10 leeks, sliced
head of garlic, peeled and crushed
sauté gently until onions are transparent
sprinkle with mixed herbs and stir in
trim the base off 4 - broccoli stems, cut into thin round slices
2 medium white potatoes left in their skins into pieces, approx. 1cm cube
sweat to soften potatoes, stir regularly - don't let it burn!
add chopped florets from 4 heads of broccoli
cover with water and bring back to a simmer

Preparing yet another spell

In lidded pan, sweat them slowly,
'Til they start to drop
Chop up the heads of broccoli
And throw them in on top

Add water just to cover
That's all that's needed now
Once more, back to a simmer
Then mop your sweaty brow
Season, with salt and pepper
Is now the current trend
A quick whiz with stick blender
Brings this process to an end

when serving, extra water can be added to taste
simmer in a pan to heat through BUT don't boil!
to garnish stir in some fresh broccoli floret shavings
For broccoli and stilton soup:
melt in 50-70g of mature blue stilton per portion
garnish with some crumbled stilton sprinkled on the middle

The time has come to serve
Dilute the mix to taste
This should appear quite liquidy
Not as a gloopy paste
There should be bits of broccoli
With signs of some leeks too
But, remember this is soup
Not a thick and chunky stew
Now that all is done
We can enjoy this treat
