Knob of marg, gently melted

Chunks of swede, sweet potato
Piece of parsnip, carrots diced
Sliced broccoli stems, short celery stick
All, mixed herb dusted, does the trick
Pan well covered, sauté slowly
Let them sweat until they soften
Add, cauliflower, then broccoli, white potato too
A good stir, replace the lid, really let it stew

5 litre (9/10 pint) pan
melted sunflower spread to cover base
large spanish onion, thinly sliced
4/6 leeks, sliced
head of garlic, peeled and crushed, sauté gently until onions are transparent
large swede into forkable pieces, approx. 1.5cm cube
2 - orange fleshed sweet potatoes into forkable pieces, approx. 1.5cm cube
Bottom 7cm of a parsnip, peeled and finely chopped
4 - medium carrots, peeled and cut into short forkable batons
trim the base off 2 - broccoli stems, cut into thin round slices
7cm of medium celery stick, finely chopped
sprinkle with mixed herbs and stir in
sauté gently on low heat
medium cauliflower roughly chopped
chopped florets from 2 heads of broccoli
3 medium white potatoes left in their skins into pieces, approx. 1cm cube
stir regularly - don't let it burn!

Now’s the time to add some water
You don't need any stock
Just use enough to cover
Don't fill it to the top
Bring back to the simmer, stir in some yeast extract

When serving, extra water can be added to taste
simmer in a pan to heat through BUT don't boil!

Bicarb soaked, marrowfat peas
Now added to the brew
In time they go quite mushy
And improve the colour too

No time to soak or can't be bothered
use 2 tins of mushy peas instead!

Fresh ground black pepper
Coarse sea salt
Dilute to suit
