In a food processor
Pour in some olive oil
Add eight cloves of garlic
Not, too great a toil
A cap, of white balsamic vinegar
Tahini, and lemon juice as well

enough olive oil to cover base of food processor
8 cloves garlic, peeled and crushed*
10ml white balsamic vinegar
60ml tahini*
juice of a lemon*
175ml approx. water*
give a quick whiz with half the water before adding the chick peas
500g boiled chick peas (if using tinned, work on drained weight)
fresh ground sea salt and black pepper, cumin, turmeric
* adjust for personal preferences
serve with crudités (carrot/celery/cumcumber sticks etc.)
